Easy Gluten & Dairy-free Banana Bread

Here is an easy and tasty GF DF banana bread recipe for you to try.

In my house, it always disappears before it is even properly cooled, which is a good sign! Always a hit with the family!


Easy Banana Bread

(makes 1 loaf)

Gluten-free (GF) & Dairy-free (DF)



Ingredients: 3 over-ripe bananas well mashed 3 eggs Half cup sugar (or less) Half cup sunflower oil 1 3/4 cup GF flour( I use half brown rice and half fine maize flour) 2 tsp GF baking powder


Method: Beat eggs, sugar and oil together in an electric mixer. Add flour and baking powder and beat until well combined. Mix in mashed banana by hand. Pour mixture into a lined loaf tin and bake for 45 min at 225C or until a skewer stick comes out clean.


Wellness tips:

  • Spread with peanut butter to add protein and good fats needed to stabilise blood sugar for lasting energy.

  • This also makes a great breakfast or lunch box muffins. Use a muffin tin instead of loaf tins. This recipe makes 12 medium-sized muffins.
