Here is an easy and tasty GF DF banana bread recipe for you to try.
In my house, it always disappears before it is even properly cooled, which is a good sign! Always a hit with the family!
Easy Banana Bread
(makes 1 loaf)
Gluten-free (GF) & Dairy-free (DF)
Ingredients: 3 over-ripe bananas well mashed 3 eggs Half cup sugar (or less) Half cup sunflower oil 1 3/4 cup GF flour( I use half brown rice and half fine maize flour) 2 tsp GF baking powder
Method: Beat eggs, sugar and oil together in an electric mixer. Add flour and baking powder and beat until well combined. Mix in mashed banana by hand. Pour mixture into a lined loaf tin and bake for 45 min at 225C or until a skewer stick comes out clean.

Spread with peanut butter to add protein and good fats needed to stabilise blood sugar for lasting energy.
This also makes a great breakfast or lunch box muffins. Use a muffin tin instead of loaf tins. This recipe makes 12 medium-sized muffins.
